What’s happening now?

Thanksgiving is the peak day for home cooking fires, according to the U.S. Fire Administration. More pans, more people, more things asking for your attention. Now is a good time to find the lid that fits your usual frying pan.

Not the lid you think fits. The one you have actually tried. Keep it nearby while you cook, and turn the burner off if you leave the kitchen.

Has this happened before?

When Baltimore burned in 1904, firefighters came from other cities to help. Some brought equipment that could not connect to Baltimore’s hydrants. They had hoses. They had water nearby. The parts did not fit together.

What happened next?

The National Bureau of Standards surveyed hose connections. In 1905, the National Fire Protection Association adopted a standard based on that work.

The scale is different in your kitchen, but the useful question is the same: will the backup fit when you reach for it? A cold pan is the right time to find out. Not while you are trying to stop a small fire.

What can I do?

With the stove off and cold, match a metal lid or baking sheet to the pan you use most. Put it where you can reach it without leaning over the stove. Tell the next cook where it is.

For a small grease fire that is still in the pan, USFA advises sliding the lid over it and turning off the burner. Leave it covered until cool. Never add water or carry the burning pan. If you cannot safely cover it, get everyone out and call 911. Do not light a fire to practice.
